Basmati Rice with Herbs

Basmati Rice

Ingredients

1 Tbsp / 15 ml olive oil
1 Tbsp / 15 ml butter
1 cup / 250 ml fresh basil
1 ½ cups / 375 ml Dainty Basmati rice
2 ¼ cups / 560 ml chicken broth
Salt & freshly ground pepper to taste

Preparation

Heat a medium sized pot over medium heat. Add the oil and butter. Once the butter is melted, add the rice. Sauté for 2-3 minutes.
Add the broth and bring to a simmer. Immediately reduce the heat to low and cover. Allow to cook for 15 minutes.
Turn heat off and allow to sit, covered, for another 10 minutes. Season the rice with salt and pepper and stir in the fresh chopped herbs, and serve.
