Rice Cooker Celery Root & Spinach Basmati rice

Ever wonder what to do with funny looking celery root ? Try this in your rice cooker, perfect as a side for 4 people.

Celery root spinach basmati rice

Ingredients

  • 1 small Celery Root
  • 1 cup (250mL) Dainty Basmati rice
  • 2 Tbsp (30g) Butter
  • 1 sprig fresh Thyme
  • 1 sprig Fresh Rosemary
  • 2 cups (500mL) Chicken stock, or Vegetable stock or Water
  • 4 large handfuls fresh baby Spinach
  • Salt & Pepper

Preparation

1.

Peel and dice the Celery root into small dice.

2.

Add Celery root, Basmati rice, butter, thyme, rosemary and stock into your rice cooker. Cook.

3.

When done, season with salt and pepper, and stir the fresh spinach leaves into the celery root and rice. Serve.
